Shrimp & Cracked Wheat Salad |

Ingredients: |
- 150g bulghur wheat* (cracked)
- 1tsp salt
- 250g Shore Mariner Cooked Shrimps or Cooked Cutlets, defrosted & drained
- ½ small red onion, finely diced
- 2 cloves garlic, minced
- ½ cucumber, diced
- 2 tomatoes, seeds removed and diced
- Small bunch parsley, finely chopped
- Small bunch mint, finely chopped
- ½ lemon, juiced
- salt & pepper to taste
- 50ml good quality olive oil

Method: |
- Place the wheat into a bowl with the salt and pour enough boiling water to cover. Cover with glad wrap and leave for 20 minutes.
- While the wheat is softening place the rest of the ingredients into a large mixing bowl.
- After 20 minutes check the wheat and fluff with a fork to break it up. Cover & leave for another 5 minutes. Combine the wheat with the rest of the ingredients, toss together and season with salt and pepper.
- Drizzle with a little olive oil & serve.

*Substitute: 1 cup of Cous Cous if you can't get hold of bulghur wheat |
