Chinese Fried Rice with Shrimp
Shrimp
A quick and delicious meal that will certainly impress your friends. . .
Ingredients:
  • 2 Tblsp vegetable oil
  • 2 eggs, beaten with pinch salt
  • 2 stalks celery, chopped
  • 1 red pepper, deseeded and diced
  • 2-3 spring onions, finely sliced
  • 1 tsp mashed garlic
  • 3 cups cold cooked rice
  • 250 grams Cooked and Peeled Shrimps, defrosted and drained
  • 2 Tblsp soy sauce
Method:
  1. Heat 1 Tblsp oil in a non stick wok or deep frying pan, pour in beaten eggs, beat lightly with a fork until the egg is just starting to set, turn and cook briefly on the underside.
  2. Transfer to a plate and cut into strips.
  3. Add remaining oil to wok, add celery and red pepper, stir fry over a medium heat for 2 minutes, add spring onions and garlic, continue cooking for a further minute.
  4. Add rice, Shrimps and soy sauce and stir fry until everything is very hot. Toss through the egg strips. Serve immediately.
