Scallop Casserole
Scallops
A quick and delicious way to enjoy beautiful oysters. . . .
Ingredients:
  • 500gm Scallops
  • 1 bunch asparagus, cut into 4cm lenths
  • 1/4 cup chopped onions
  • 2 Tbls melted butter
  • 1 can mushroom soup
  • 1 cup bread cubes
  • 1/2 cup milk
  • 1/2 - 1 tsp curry powder
  • Sprig parsley
  • 1/4 tsp pepper
  • 1 cup shredded cheese
  • lemon rind, grated
Method:
  1. Thaw scallops if frozen, wash and drain well
  2. Simmer scallops in boiling water, drain
  3. Saute onions, add soup, milk, curry, pepper and half of the cheese, stirring continuously until cheese melts
  4. Slice scallops and add to soup mix along with asparagus
  5. Add bread cubes that have been dipped in melted butter
  6. Sprinkle with remaining cheese and bake in 215 degree celcius oven for 30mins or until golden
  7. Remove from oven and sprinkle with chopped parsley and lemon rind just prior to serving
