Angels Breakfast Scallops Wrapped in Bacon on Ciabatta

A quick and delicious change from bacon and eggs for breakfast...or an easy light lunch on balmy summer days. . . .

Ingredients:
|
- 24 Scallops (roe on)
- 24 streaky bacon rashers
- 24 skewers soaked in water for an hour
- 100g cream cheese
- 2 slices ciabatta bread
- 4 tbsp The Grove Avocado Oil (lime infused)
- 2 tomatoes
- Food by Chef's Lime Hollandaise

Method:
|
- Wrap each scallop in a strip of bacon and thread carefully onto skewers so that the bacon is secured
- Grill the ciabatta bread on both sides then smear with cream cheese
- Grill the tomatoes and season with salt and pepper
- Heat the avocado oil over high heat and pan-fry the scallop skewers for approximately 5 minutes, turning regularly
- Arrange the scallop skewers on top of the ciabatta bread, place grilled tomato on the side and drizzle with slightly warmed lime hollandaise
