These prawn skewers are perfect summer food - just pre-prepare along with the salads a few hours ahead and then relax with family until it's time for lunch...toss them on the barbie and minutes later your meal is ready - fantastic!
Ingredients:
  • 1kg Raw Prawn Cutlets
  • 1/2 cup soy sauce
  • 2 tbsp brown sugar
  • 1/2 teaspoon ground ginger
  • 2 tbsp wine vinegar
  • 1 clove garlic, crushed
  • 2 tbsp tomato sauce
  • Bamboo skewers, soaked for at least 30 minutes
Method:
  1. To make the marinade, mix together all ingredients except for prawns, and let stand for one hour to combine flavours
  2. Place the prawns in a non-metal dish and pour over the marinade, cover and refrigerate for 1-2 hours
  3. Thread onto skewers
  4. Heat the barbecue and place a large square of baking paper on the grill bars
  5. Place the prawn skewers onto the baking paper and brush with marinade regularly while cooking
  6. Take care not to overcook the prawns - one and a half minutes each side is usually enough
  7. Serve skewers immediately with your choice of salads
Serves: 4 as an entree or light meal
